Shrimp & SalsaTacos
These tacos combine some of summer’s best treats; tomatoes, peaches, avocados, corn and peas!
Ingredients for 8 large tacos:
8 flour tortillas
4 T. oil for frying the tortillas
For the Salsa:
4 scallions chopped
1 avocado chopped
1 peach pealed and chopped
1 tomato chopped
1 stalk celery chopped
1 cup corn
1 cup peas
1 T butter
1 1/2 lemons juiced (reserve 2T for shrimp)
1 T sesame oil
1 T soy sauce
Jalapenos to taste
For the Shrimp
1 1/2 pound fresh shrimp peeled & deveined
1 T fresh chopped garlic
1 ball fresh mozzarella julienned
Fry tortillas until lightly browned. Fold in half and drain on paper towels.
Saute corn in 1T butter for 2 minutes and set aside to cool
Saute peas in 1 T butter for minutes and add to corn
Mix together all the salsa ingredients
Saute the shrimp in butter and garlic until done then add 2 T lemon juice.
Fill the tortillas with salsa and top with shrimp and mozzarella.
