Swiss Chard and Eggs

We really like Swiss Chard and prepare it often by just sauteing it with chopped onions and a bit of chopped garlic.  This time I served it with eggs and a beautiful heirloom tomato salad!  A wonderful combination of colors and flavors that was really simple to make!

1 bunch Swiss chard
1 onion
1 clove garlic
4 eggs
salt and pepper

1 box heirloom tomatoes
small handful of fresh basil leaves
1 container fresh mini mozzarella balls
4 T. balsamic vinegar


Wash and chop Swiss chard
Chop onion
Combine onion and chard, sprinkle with salt and pepper
Saute chard and onion until softened
Place four eggs on top of the chard and cover. 
Cook until eggs are done.

Cut tomatoes in half
Cut mozzarella balls in half
Combine the tomatoes and mozzarella in salad bowl
Chop basil and add to tomatoes
Drizzle with Balsamic and sprinkle with salt and pepper
Mix well and serve with the eggs and Swill Chard
