Proof Positive I'm CRACKERS

With an entire isle of boxed crackers in every market why oh why would I want to make my own?  Well I just felt like experimenting and guess what?  I’m glad I did! 
Fast to put together and filled with fresh herbs from the pot on my patio, these little treats went fast an I’ll be experimenting with other varieties next week!
Fresh Herbed Parmesan Crackers
( about 40 crackers)
§  2 cups self rising flour
§  1 teaspoon sea salt
§   ¼ cup chopped fresh herbs ( thyme, sage, oregano, parsley)
§  2/3 cup warm water
§  1/3 cup olive oil
§  ½ Grated fresh Parmesan
§  Preheat oven to 400.
§  Grease two baking sheets with cooking spray and set aside.
§  In a large mixing bowl combine the flour, salt, and fresh herbs.
§  Use a liquid measuring cup for the water and olive oil; add it to the flour mixture.
§  Stir it all together until you get smooth dough. Cut the dough in half using one for each baking sheet.
§  With your fingers, flatten the dough onto the bottom of the baking sheet. You want it as flat and as thin as possible. Do the same with the other dough ball.
§  Sprinkle parmesan cheese on top then cut the dough into squares with a pizza cutter.
§  Bake for 12 to 14 minutes.
§  Cool for 10 minutes.
§  Serve.
