Taste of Home Cooking School Cook Book

     I'm so excited about sharing with you something new from one of my favorite magazines; Taste of Home.  I have in my kitchen and hot little hands the newest Taste of Home Cooking School Cookbook and it is a real treasure!  From measuring correctly to meal planning, from what knives you need, to cookware and  bake-ware this book is not only filled with great recipes but fantastic expert advice. 
     The first recipe that caught my eye was Lick-The-Bowl-Clean Hummus.  Well I went right into the kitchen to give it a try; after all I've been making my own hummus for years and "lick the bowl clean" is quite a promise! Promise fulfilled, it is absolutely, hands down the best hummus I have ever eaten!
4 Large Onions thinly sliced
1/4 cup plus 1/3 cup olive oil divided
1 can (15 ounce) chickpeas rinsed and drained
1/4 cup plus 2 tablespoons lemon juice divided
1/4 cup tahini
1/8 teaspoon each salt and pepper
In a large skillet, saute the onions in 1/4 cup olive oil until softened. Reduce heat to medium-low, cook stirring occasionally for 30 minutes or until deep golden brown.
Transfer to a food processor, add the beans, lemon juice, tahini, garlic, salt, pepper and remaining oil.  Cover and process for 30 seconds or until smooth.

      A few pages on I came across  Greek-Style Chicken Burgers  which necessitated another trip to the kitchen to check if I had the right ingredients.  As luck would have it, I did and so Greek-Style Chicken Burgers went onto the dinner menu!  The directions are clear and simple, easy to follow and I love that every recipe has Nutrition Facts!  I did make one small change; that was using a whole wheat flat bread instead of the normal hamburger bun.  These chicken burgers would also be great served with a green salad and no bun at all; I'll leave that choice up to you.

     From brand new, totally inexperienced cooks to the person who has years making family meals under their apron, there is something for everyone in Taste of Home Cooking School Cookbook!  In fact this is the one cook book that will be heading off to university with my daughter.....who by the way falls into the totally inexperienced cook.  I'm thrilled she will have such a great sous chef in Taste of Home Cooking School Cookbook!
