The first recipe that caught my eye was Lick-The-Bowl-Clean Hummus. Well I went right into the kitchen to give it a try; after all I've been making my own hummus for years and "lick the bowl clean" is quite a promise! Promise fulfilled, it is absolutely, hands down the best hummus I have ever eaten!
4 Large Onions thinly sliced
1/4 cup plus 1/3 cup olive oil divided
1 can (15 ounce) chickpeas rinsed and drained
1/4 cup plus 2 tablespoons lemon juice divided
1/4 cup tahini
1/8 teaspoon each salt and pepper
In a large skillet, saute the onions in 1/4 cup olive oil until softened. Reduce heat to medium-low, cook stirring occasionally for 30 minutes or until deep golden brown.
Transfer to a food processor, add the beans, lemon juice, tahini, garlic, salt, pepper and remaining oil. Cover and process for 30 seconds or until smooth.
